The Good That Remains

Sometimes life deals a crummy hand. Sometimes you marry the wrong person for the right reasons. Sometimes it doesn’t work out. I married young and after 15 years found myself in the middle of an ugly divorce. I can sum it up in one sentence. He got all the Christmas ornaments (and there were thousands) but I got his relatives (and there are thousands!) 🙂 Literally. That said, I didn’t get to keep his wonderful Grandmother, but I did get to keep my fond memories of her and this all time favorite recipe.

Noonie’s Chicken
 
4 Chicken Breast halves
1/2 Cup Sour Cream (I use 3/4 cup)
1 Tablespoon Lemon Juice
1/2 Tsp. Worcestershire Sauce (I use an extra dash or two)
1 Tsp. Celery Salt
1 Tsp. Onion Powder
1 Tsp. Paprika
1/2 Stick of Butter
Breadcrumbs
 
Mix the sour cream, lemon juice, worcestershire sauce, celery salt, onion powder and paprika together. Dip each piece of chicken in the mixture, then roll the chicken and place in a baking dish. Sprinkle generously with bread crumbs, and dot with a generous slice of butter.
 
Bake uncovered in a 350 degree oven for 45 minutes, or until done and the breadcrumbs are slightly browned.
 
Serve with rice pilaf and glazed carrots for a fabulous meal. Enjoy!!

        Thanks Bonnie! My divorce was back in 1997…it took me a few years to move past the drama, but now it seems so long ago. Now it’s like a blink in the past 🙂
